Flava Packs Whole Jerk Chicken Recipe

For The Chicken
Whole Chicken (Spatchcocked for quicker cook)
Loads of bay leaves (helps to have a tree or a neighbour with one)
Oil
Melted Butter to finish
Salt
A barbecue
Method
Marinate the chicken with Flava Packs Jerk Seasoning and leave for 1hr or overnight in the fridge.
When ready to cook. Bring the chicken out to come to room temp. Start up the barbecue, leaving one half with no coal. Once the coals are grey, place the bay leaves on top of the half with no coals and then the chicken on top. Close the lid and leave to slow cook for around 30/45mins. The longer you leave the more flavour is infused.
Once the chicken has had its time resting on the baby leaves, place the chicken on the side with coals. You may need to pre heat some more coal if the existing has burnt down too much to really char that chicken off. Keeping an eye on the chicken, turning occasionally to stop it really burning. We want to get a nice colour on all sides.
When juices run clear and golden all over, remove from the barbecue and serve. We rubbed some melted butter with Jerk seasoning all over the chicken to add that bit extra.
Serve with rice and peas, salad or sides of your choice.
Flava Tip:
We spatchcocked our chicken to make it easier and quicker to cook on the barbecue. To do this in the oven, simply spatchcock or leave whole and roast according to the instructions on the packaging. You can even add a layer of bay leaves for the first 30mins to really infuse the island flavours.
