Flava Packs’ Smash Burgers Recipe

Lettuce (Finely Sliced)
American Cheese
Smoked Streaky Bacon
Brioche Bun
Red Chilli (Finely Sliced)
Pickles (Finely Sliced)

Method
Divide the meat into four loose golf ball sized balls and coat in Flava Packs Jerk Seasoning. Leave to marinate for an hour.
Slice the brioche buns in half, grill cut side down and set aside.
Cook some bacon until crisp, then set aside.
Put a stainless steel or cast iron pan over a high heat until it is really hot. Whilst the pan is heating up, roll the balls of meat in fine salt. Place two balls in the pan, cover with baking paper and flatten with a flat heavy object. Remove the baking paper and leave cook for a 2 minutes.
When it is ready to flip, get a metal spatula/scraper. Scrap the patties off the pan, making sure all the crispy bits of the patty don’t stay stuck to the pan. Flip! Sprinkle Flava Packs Jerk Seasoning on the patties, then add a slice of cheese. Leave for a minute to get crispy on the other side. Remove from pan, layering one patty on top of another.
To assemble the burger, scatter a bun base with lettuce followed by a smashed patty, the bacon, gherkin slices and the bun top. Serve with your chosen sauces on the side.
