A Ribeye Steak

A load of fine salt

Flava Packs JERK Seasoning

Your choice of sides.

Method

Get your piece of meat out, pat it dry with paper towels.  Season with Flava Packs Jerk Seasoning.  Leave to marinate for up to 24hrs to let all that flavour absorb into the meat.

A couple hours before you are ready to cook, get your piece of meat out the fridge and warm to room temperature.  If you cook from cold it will shock the meat and make it tough, so the longer you have it out the better.

Cover with oil and season all over with fine sea salt.  Place a frying pan on a high heat until it becomes really hot.  Add the steak, turning every minute is best.  But every 2 minutes is sufficient.  After both sides have seen the bottom of the pan and a load of butter and any aromatics you have lying around.  Baste the Steak for 1 minute or until it has reached how you like your steak.

Leave to rest for a few minutes before cutting against the grain and serving with some French fries and I like a bit of dijon.  But the sides and sauce is up to you.
