Jerk Lamb Tacos with pickled Red Onion and sliced Spring Onion

IngrEdients

   4 Lamb Neck fillets

8-12 Soft shell tacos

Half a Cos Lettuce

Knobs of Butter

2-3 Limes

500ml Lamb/Beef stock

1 Pack of Jerk seasoning

Salt

Method

Preparation:

Coat lamb with jerk seasoning and marinate in the fridge for 1 hour to overnight.

Preheat the oven to 140°C.

Rub the lamb with oil, season with salt, seal in a hot pan, and place in an oven-safe pot with stock.

Cook in the oven for 2 hours, checking after 1 hour.

While Cooking:

Prepare lettuce, lime slices, sauces, and warm tacos.

After Cooking:

Remove lamb, skim fat, reduce liquor, pull lamb apart, add butter to liquor, and mix.

Serving:

Assemble the tacos with the pulled lamb, lettuce, lime, sauces, and enjoy.
