6 Beef Short Ribs

1 litre Beef Stock (warmed)

Block of Mozzarella Cheese (grate as you go)

Something Pickled

Method

Marinate the Short Ribs: Start by marinating the beef short ribs in Flava Packs’ Jerk Seasoning. Pop them in the fridge and let them soak up the flavours for at least 1 hour, or even up to 24 hours if you have the time. Remember to take them out of the fridge about 30 minutes to an hour before you plan to cook them.

Preheat the Oven: Preheat your oven to 140°C. Get an ovenproof dish ready, preferably one with a lid. If you don’t have one, no worries—tin foil will do the trick!

Sear the Short Ribs: Heat a frying pan on high heat and add a bit of oil. Season the short ribs all over with salt. Place them in the pan, but don’t crowd them—do this in batches if needed. Sear each side for about 2 minutes until you get a nice golden crust.

Prepare for Baking: Once seared, transfer the short ribs to your ovenproof dish. Pour the beef stock into the pan you used to sear the ribs and scrape up all the tasty bits—this is called deglazing. Pour these juices over the beef, cover the dish, and pop it in the oven.

Cook Slowly: Let the short ribs cook for 2-3 hours. Halfway through, check on them to make sure they’re still covered with enough liquid. This liquid is what makes takes these from tacos, to Birria Tacos! Enjoy the wonderful aroma as it fills your home.

Shred the Meat: When the cooking time is up, take the dish out of the oven. Carefully place the short ribs in a bowl or container and use two forks to shred the meat, discarding any thick fatty bits and bones. Return the shredded meat to the pot with the cooking juices.

Prepare the Tacos: Heat a frying pan on medium to high heat. Dip each taco into the cooking juices, making sure to soak up the beef fat on top. Place the taco in the hot pan and turn it after about 30 seconds. Fill the taco with the shredded meat and some grated mozzarella cheese. Fold it in half and cook for a minute, then flip it over and cook for another 30 seconds on the other side.

Serve and Enjoy: Serve your delicious tacos with lime wedges, pickles, and a pot of the cooking juices for dipping. Enjoy your meal!
