Flava Packs Chicken Fried Rice Recipe

Oil
3 eggs (beaten)
Red Pepper (Sliced)
Onion (Cut into Pearls)
Spring Onion (Sliced)
Rice (Freshly Cooked)
4 Chicken Thighs
Chicken Stock
Steamed Cavolo Nero (Optional)
For the Marinade:
Soy Sauce, Fish Sauce,
Rice Wine Vinegar, Ginger Powder
Method
Marinate the Chicken Thighs for up to 24hrs in the fridge.
Add oil to a hot frying pan, preferably uncoated stainless steel. Add the marinated Chicken Thighs and fry on both sides for 5mins. Pour in some chicken stock to deglaze the pan, cover and cook on a low heat for 10mins or until chicken is cooked through.
Heat up a Wok until really hot. Working quickly, pour some oil and swirl around the wok. Add in the cut up vegetables, toss and leave to cook for a couple minutes. Add the marinade from the chicken. Toss. Add the rice and toss. Make a well in the middle of the wok, add a bit of oil then once hot pour in the eggs. Fry for a minute then toss to mix the egg into the fried rice.
Slice the Chicken thighs and serve on a bed of fried rice along with the steamed cavolo nero. Pour on some of the sauce from the chicken thigh pan. Top with spring onions to finish.
