Flava Packs Caribbean Curried Chicken Recipe

For The Chicken

4 Skin-on Chicken thighs

Curry Powder

Dried Parsley

Oil

Spring Onion Green bit (Finely Sliced)

Flava Packs JERK Seasoning

FOR THE SAUCE

Gravy granules

Chicken Stock

Curry Powder

Dried Parsley

Spring Onion White bit (Finely Sliced)

Butter (Unsalted)

Flava Packs JERK Seasoning

Rice (Cooked to instructions on pack)

Method

Marinate the chicken with curry powder, parsley and Flava Packs Jerk Seasoning.  Leave for 1hr or overnight in the fridge.

When ready, coat the chicken in oil and season with salt.  Put the chicken in a roasting tray and place in a pre heated oven at 200c.  Cook for 40mins, basting half way through.

Whilst the chicken is cooking, heat a small/medium sized saucepan.  Add some butter to melt then the curry powder, white parts of the spring onions and Flava Packs Jerk Seasoning.  Leave for 1 minute.  Add the stock and reduce.  Once reduced by a third, add some gravy granules and stir until thickened.  Take off the heat and stir through some butter.

Remove Chicken from the oven.  Serve with plain rice and salad or your choice of sides.
