8 Beef Short Ribs

Beef Stock or Water & Beef Stock Cubes

Spring Onions (Rough Cut, Keep green bit for garnish)

Brown Sugar

Onions (Cut into Pearls)

Carrots (Rough Cut in half)

Garlic (Minced)

Ginger (Grated)

Salt

Method

Coat the Beef Ribs with Flava Packs Jerk Seasonings and leave to marinate for 1hr or overnight in the fridge.  Remove from fridge 30 minutes before cooking.

Pre heat an oven to 120c and heat a stainless steel pan on medium heat.  Add a generous amount of brown sugar to cover the base of the pan and a touch of water, allowing it to melt and darken without stirring. Add the beef and stir to coat the pieces thoroughly.  Cook for 5 to 10 minutes until the chicken browns nicely.

Add the all the vegetables and cook for 5 more minutes. Add stock and bring to a boil.  Transfer to an oven proof dish with a lid or not lid, use tinfoil.  Place in the oven and cook for around 4hrs, checking occasionally. Once 4hrs has passed, the whole house smells of this gorgeous dish, you can remove from the oven and place on the hob.

To thicken the cooking liquor (optional), add some tbsp corn starch with cold water to form a paste, then add it to the pan to thicken the sauce.  Keep stirring on a low heat until it comes together. Remove from the heat, add some butter and stir until the sauce is glossy and mixed in.

Season with Spring Onions and serve.

We served it with some buttered jerk baby carrots (see recipe) and some Pomme Puree (see recipe).

Service!

Flava Tip:

Making your own caramel is easy if you add a splash of water and do not stir. If needs be shake the pan to help all the sugar turn to caramel. Once foaming, chuck in the beef and mix until coated. Burnt sugar = bitter.
